ALMOND JOY

INGREDIENTS:
2 tsp. erythritol
8 oz. shredded coconut
4 oz. sugar-free dark chocolate chips
½ cup almonds (or any nut of your choice), raw or dry
roasted
INSTRUCTIONS:
1. Combine the shredded coconut with the sweetener in a
medium-sized bowl; mix well until the coconut clumps
together, for a couple of minutes.
2. Make small candies from the mixture, and place an almond in
the middle of each one.
3. Now, melt the chocolate in the microwave or a double boiler.
4. Dip each candy into the chocolate and arrange it onto wax
paper.
5. Put the coated candies into the freezer and let chill until set.
6. Serve and enjoy.
