CHOCOLATE COCONUT COOKIES

INGREDIENTS:
1 cup almond flour
3 tbsp. coconut flour
¼ tsp. salt
⅓ cup unsweetened shredded coconut
⅓ cup Erythritol
½ tsp. baking powder
¼ cup cocoa powder
¼ cup coconut oil
¼ tsp. vanilla extract
2 eggs
INSTRUCTIONS:
1. Preheat oven to 350ºF. Cover a baking tin with some
parchment paper.
2. Combine the dry ingredients and mix with a hand mixer.
3. In another bowl, combine the wet components, and then add
to the dry until well blended.
4. Break apart pieces of the cookie dough and roll into 20 balls.
5. Arrange on the cookie sheet and bake for 15-20 minutes until
done.
