1 large egg
2 oz. unsweetened desiccated coconut
4 oz. unsalted butter, melted
3 oz. almond flour
1 tsp. vanilla extract
3 oz. low-carb sugar-free maple syrup
1 tbsp. unsweetened shredded coconut
½ tsp. baking powder
2 tbsp. unsweetened cocoa powder
1 tbsp. unsalted butter, melted
2 tbsp. hot water
2 tbsp. unsweetened cocoa powder
1. Preheat oven to 340˚F, and prepare a 7×11 baking tin by lining
with parchment paper.
2. Take a mixing bowl and add the cocoa powder, baking powder,
and desiccated coconut; mix all the ingredients until
3. Add the vanilla extract, egg, and melted butter to the mixture
and keep mixing until thoroughly combined.
4. Transfer the mixture to the baking tin, and make it even on top
using a spatula.
5. Place in the oven and bake for 25 minutes, or until you feel
springing back upon touching.
6. To prepare the frosting, add the cocoa powder and sift it in a
mixing bowl.
7. Add melted butter and hot water to the mixture, and keep
stirring until it is ready to be spread.
8. When properly baked, remove from the oven; spread the
frosting on top and allow it to cool.
9. Sprinkle with the shredded coconut, cut into bars, and enjoy.
