COCONUT NO-BAKE COOKIES

Preparation Time: 10 minutes | Servings: 20
INGREDIENTS:
1 cup melted coconut oil
1 packet (2g) Monk fruit sweetener
3 cups shredded unsweetened coconut flakes
INSTRUCTIONS:
1. Cut out a sheet of parchment paper and place it on a cookie
tray.
2. Combine all of the fixings.
3. Run your hands through some water from the tap, and then
shape the mixture into small balls. Arrange them on the pan
around 1”-2” apart.
4. Press them down to form a cookie, and refrigerate until firm.
5. You can prepare these into individual bags if you’re an on-thego
kind of person. They will stay fresh covered for up to 7
days (room temperature). Store in the fridge for up to a month,
or frozen up to two months.
