Lemon Garlic Lobster Tails
Ingredients:
4 lobster tails (5-6 oz each)
1 Tbsp fresh parsley, finely chopped (plus more for garnish)
2 garlic cloves, pressed
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp black pepper
1 1/2 Tbsp olive oil
1 1/2 Tbsp fresh lemon juice
4 Tbsp unsalted butter, divided
Instructions:
Prepare Lobster Tails:
Use kitchen scissors to cut through the top shell, stopping at the base.
Crack the ribs on the back, open the shell, and lift the meat, keeping it attached at the base.
Make Marinade:
Mix parsley, garlic, dijon mustard, salt, pepper, olive oil, and lemon juice in a bowl.
Broil Lobster Tails:
Place lobster tails in a roasting pan, divide the marinade over them and dot with butter.
Broil on high heat for 10-11 minutes until the meat is opaque and white, registering 145˚F.
Make Garlic Lemon Butter:
Drain drippings into a saucepan, add remaining butter, simmer, and remove from heat. Use as a dipping sauce.
